Hello Friends,
I don't usually trust a recipe that calls itself magic. That is usually code for "tastes fine, oversold." But Black Magic Cake has been winning people over at potlucks for decades, and after making it twice this week, I understand the name.
The trick is a cup of hot coffee stirred right into the batter. It does not make the cake taste like coffee at all, it just wakes up the cocoa and turns an ordinary chocolate cake into something darker and richer than you'd expect from a one-bowl recipe.
My neighbor Denise knocked on my door asking what I was baking, because the smell had drifted clear across the yard. She left with half the cake wrapped in foil and a promise to bring the pan back washed. I am still waiting on that pan.
So tonight's pick is Black Magic Cake, a one-bowl favorite that looks fancy enough for company but comes together faster than you would think.
Happy Cooking, Anisa

Today's Recipe
Black Magic Cake
Serves 12 | Prep 20 min | Bake 35 min
|
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1 cup hot strong coffee
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon distilled white vinegar
- For the frosting: 1/2 cup unsalted butter, softened
- 1/3 cup unsweetened cocoa powder
- 3 cups powdered sugar
- 1/3 cup milk
- 1 teaspoon vanilla extract
- Pinch of salt
Directions
- Preheat the oven to 350 degrees F. Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add the eggs, buttermilk, hot coffee, oil, vanilla, and vinegar. Beat with a mixer on medium speed for about 2 minutes, until smooth. The batter will be thin, that is normal.
- Divide the batter between the prepared pans and bake for 30 to 35 minutes, until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy, then beat in the cocoa powder. Alternate adding the powdered sugar and milk, beating well after each addition, until smooth and spreadable. Stir in the vanilla and salt.
- Frost the cooled cake between the layers, on top, and around the sides. Slice and serve.

Kitchen Hack
Room-temperature eggs and butter blend more evenly into batter than cold ones straight from the fridge. If you forget to set them out ahead, submerge whole eggs in a bowl of warm water for five minutes before cracking them.
Store brown sugar with a slice of bread in the bag or container. The bread dries out so your sugar does not have to, and it stays soft for weeks instead of turning into a brick.
