Some mornings call for something more than plain pancakes, but not much more effort.

I have been on a kick lately of sneaking extra protein into breakfast without turning it into a whole production.

This was an old recipe that I found. I had forgotten all about it but I'm so glad for it to be back in my breakfast rotation.

Today's Cottage Cheese Pancakes are tasty. Just blend it smooth, and nobody at the table will ever guess what is hiding inside.

Today's Recipe
Cottage Cheese Pancakes
Serves 4 | Prep 5 min | Cook 10 min
Ingredients
  • 1 cup all-purpose flour, spooned and leveled
  • 2 teaspoons baking powder
  • 1/4 teaspoon sea salt
  • 1 cup whole milk cottage cheese
  • 3 large eggs
  • 2 tablespoons maple syrup, plus more for serving
  • 2 tablespoons vegetable oil or melted butter
  • 1 teaspoon vanilla extract
Directions
  1. Whisk the flour, baking powder, and salt together in a large bowl.
  2. Blend the cottage cheese, eggs, maple syrup, oil, and vanilla until smooth.
  3. Pour the wet mixture into the dry ingredients and stir until just combined. The batter will be thick.
  4. Heat a lightly greased nonstick skillet over medium low. Scoop 1/3 cup of batter per pancake and spread slightly with a spatula.
  5. Cook about 2 minutes per side, until puffed and golden. Lower the heat if they start browning too fast.
  6. Serve warm with more maple syrup.
