There's a very short window every September when it still feels wrong to want pumpkin everything, and then suddenly it doesn't anymore.

I crossed over this week. My fridge currently has more cans of pumpkin puree in it than I'd like to admit.

The first jar I made this year, I didn't measure the cinnamon at all. I just kept shaking it in until the kitchen smelled like a candle store, then called it good.

Today's Pumpkin Overnight Oats take five minutes the night before and taste like pumpkin pie you're allowed to eat for breakfast. No oven, no stovetop, just a jar and your fridge.

Pumpkin Overnight Oats
Serves 2 | Prep 5 min | Chill Overnight
Ingredients
  • 1 cup old-fashioned rolled oats
  • 2 tablespoons chia seeds
  • 1/2 teaspoon ground cinnamon
  • Pinch ground cardamom
  • Pinch ground nutmeg
  • Pinch sea salt
  • 1 1/3 cups unsweetened almond milk
  • 1/4 cup pumpkin puree
  • 2 teaspoons maple syrup
  • Whipped coconut cream, for topping (optional)
  • Toasted chopped pecans, for topping (optional)
Directions
  1. In two lidded jars, divide the oats, chia seeds, cinnamon, cardamom, nutmeg, and salt. Shake or stir each jar to mix.
  2. Divide the almond milk, pumpkin puree, and maple syrup between the jars. Stir well, making sure no chia seeds are clumped at the bottom.
  3. Cover and refrigerate overnight, or up to 5 days.
  4. In the morning, top with whipped coconut cream and toasted pecans, if using, and serve cold.
