I keep three things on my kitchen counter this time of year: a sheet pan, a bottle of lime juice, and whatever peppers looked good at the store. That combination has bailed me out more weeknights than I can count.

This one came from one of our very own readers, Tricia. She says this "restaurant quality, if not better," and after making it myself I will not argue with her. Steak, peppers, and onions all roast together on one pan, and you are eating in under 30 minutes.

That is today's recipe, and it is going straight into my regular rotation.

Sheet Pan Beef Fajitas
Serves 4
Ingredients

1½ pounds flank or skirt steak, sliced thin against the grain

2 bell peppers (red and yellow), sliced into strips

1 large yellow onion, sliced into strips

3 tablespoons olive oil, divided

2 tablespoons fajita seasoning (chili powder, cumin, garlic powder, onion powder, paprika, salt)

1 lime, juiced

8 small flour or corn tortillas, warmed

Toppings: sour cream, shredded cheese, cilantro, avocado
Directions

1. Preheat oven to 425°F. Line a large sheet pan with foil or parchment.

2. In a large bowl, toss the sliced steak, peppers, and onion with 2 tablespoons olive oil and the fajita seasoning until everything is coated.

3. Spread in a single layer on the sheet pan. Do not crowd it, the vegetables need room to char instead of steam.

4. Roast 15 to 18 minutes, stirring once halfway through, until the steak is cooked through and the peppers have color on the edges.

5. Squeeze the lime juice over everything right out of the oven.

6. Pile into warm tortillas and top as you like.

Anisa's Kitchen Hack:

Slice the steak while it's still slightly frozen, about 20 minutes in the freezer firms it up enough for clean, thin slices.

Warm your tortillas in a dry skillet for 15 seconds a side. Microwaved tortillas turn rubbery, skillet ones stay soft.
