Today's Recipe

Garlitastic Rosemary-Sizzled Chicken Cutlets

Serves 4

Ingredients

3 medium cloves garlic, minced (about 1 tablespoon)
3 tablespoons minced fresh rosemary
2 tablespoons fresh juice from 2 lemons
6 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken breasts (5 to 7 ounces each), cut into 8 cutlets

Directions

1Prepare the grill: Light a chimney of charcoal. When the coals are covered with gray ash, arrange them on one side of the grill. Replace the grate, cover, and preheat for 5 minutes. (For gas grills, preheat half the burners on high for 10 minutes.) Clean and oil the grate.
2Make the marinade: Whisk together garlic, rosemary, lemon juice, olive oil, salt, and pepper. Reserve half the marinade. Coat the chicken with the remaining marinade.
3Grill the chicken: Place chicken over direct heat. Cover and cook, rotating occasionally (without flipping), until nearly cooked through, about 4 minutes.
4Finish: Flip and cook for about 30 seconds, until done. Transfer to a platter, whisk the reserved marinade, pour it over the chicken, and serve immediately.
Since this is a bright, lemony rosemary chicken, it pairs well with fresh vegetables, grains, and potatoes.

Anisa's Kitchen Tip:

Pound your cutlets to an even thickness before marinating, even a quick pass with the flat side of a knife works if you don't have a mallet. Uneven thickness means the thin edges overcook while the thick center is still raw, and since this whole dish is a 5-minute cook, there's no time to fix that on the grill.
