Greetings!
I wanted to bring you a dish that's full of flavor, easy to pull together, and perfect for nights when you want something satisfying but not fussy. This Chicken Fajita Casserole does just that. It layers all the fajita goodness—chicken, bell peppers, onions, tortillas, cheese into one skillet dinner that practically makes itself.
It's one of those recipes I love because you get big flavor, minimal mess, and leftovers that taste even better the next day.

Today's Recipe: Chicken Fajita Casserole
Ingredients:
- 3 tablespoons avocado oil
- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 medium onion, halved and sliced
- 1 pound boneless chicken thighs, trimmed and cut into strips
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and ground black pepper, to taste
- 1/2 cup chicken broth
- Juice of 1 lime
- 4 corn tortillas, cut into strips
- 1 cup shredded Monterey Jack cheese (or your favorite melting cheese)
- Chopped fresh cilantro or green onions for garnish (optional)
Recipe:
1. Preheat oven to 375°F. Lightly grease a large oven-safe skillet or baking dish.
2. Heat avocado oil in the skillet over medium-high heat. Add bell peppers and onion; cook, stirring occasionally, until vegetables soften, about 4 to 5 minutes.
3. Add chicken strips, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Stir to coat and cook until chicken is nearly cooked through, about 5 to 7 minutes.
4. Pour in chicken broth and lime juice. Stir gently, scraping any browned bits from the bottom of the pan.
5. Fold in tortilla strips and spread mixture into an even layer.
6. Sprinkle shredded cheese over top.
7. Transfer the skillet or dish to the oven and bake until the cheese is melted and bubbly, about 10 minutes.
8. Remove from oven and let rest a few minutes. Garnish with cilantro or green onions before serving.
