When the weather turns crisp, I always crave something hearty simmering on the stove. This Beef and Vegetable Stew fills the kitchen with the kind of aroma that makes you instantly feel at home. It's full of tender beef, rich broth, and garden vegetables that warm you from the inside out.

It's one of those dishes that tastes even better the next day, making it perfect for meal prep or cozy weekends at home.

Today's Recipe: Hearty Beef and Vegetable Stew

5 Dollar New OrangeIngredients:
- 1 1/2 pounds beef stew meat, cut into bite-size pieces
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup diced tomatoes (with juices)
- 3 large carrots, sliced
- 2 potatoes, peeled and diced
- 1 cup chopped celery
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 bay leaf
- 1 cup frozen peas (added at the end)

Recipe:
1. Toss the beef in flour until coated.

2. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides. Remove and set aside.

3. In the same pot, sauté onion and garlic until softened.

4. Add beef broth, tomatoes, carrots, potatoes, celery, thyme, salt, pepper, and bay leaf. Return beef to the pot.

5. Bring to a boil, then reduce heat to low. Cover and simmer for about 1 1/2 hours, stirring occasionally, until beef and vegetables are tender.

6. Stir in peas and cook for another 5 minutes.

7. Remove bay leaf and serve warm with crusty bread.
