Greetings!
As the season is ending, Vidalia onions are the onions I really love and it is almost time to bid farewell to them for the year. They are sweet, mild, and perfect for the grill.
The other day I tried making quesadillas with them, and they turned out so good that I had to share. The sweet onion, gooey cheese, and a hint of fresh coriander come together beautifully. These are great as a light lunch, an appetizer, or a side with grilled chicken or steak.

Today's Recipe: Sweet Onion Grilled Quesadillas
Ingredients:
- 1 medium-large Vidalia sweet onion
- Olive oil for brushing onion and tortillas
- 4 flour tortillas (6 to 7 inches)
- 3/4 cup grated Monterey Jack cheese (about 3 ounces)
- 1/4 cup fresh coriander (cilantro), chopped
Recipe:
1. Preheat your grill. Slice the onion crosswise into 1/4-inch slices, keeping them intact. Brush both sides with olive oil and season with salt and pepper.
2. Grill the onion slices over medium heat for about 4 minutes per side until lightly charred and softened. Transfer to a bowl and separate into rings.
3. Brush two tortillas lightly with olive oil on one side and place them, oiled side down, on a tray. Divide the grilled onion, Monterey Jack cheese, and coriander evenly between them. Top with the remaining tortillas. Brush the tops with a little more oil.
4. Grill the quesadillas for about 1 minute per side, until golden brown and the cheese is melted.
5. Cut into wedges and serve warm.

Extra Toppings: Make The Most of Vidalia Onions
Vidalia onions are naturally sweeter and milder than most onions, but that also means they bruise more easily. Handle them gently and store them in a cool, dry spot to make them last longer.
Since they are only around for part of the year, some folks stock up by the bagful and store them for later.
Want to enjoy the whole onion? Try this: Peel one, slice off the top and bottom so it sits flat, then top it with a little butter. Microwave it for 7 minutes on high or wrap it in foil and bake at 350°F for 45 minutes until tender. It is so simple and so good.
