Greetings!
have been craving something bright, smoky, and just a little bit tropical.
That is why I fired up the grill for this Bahamian Grilled Chicken. It is zesty, juicy, and packed with island flavor. This is the kind of dish that makes you feel like you are sitting near the ocean with a warm breeze at your back. If you have never tried this marinade before, you are in for a treat.

Today's Recipe:Bahamian Grilled Chicken
Ingredients:
- 4 to 6 bone-in chicken thighs (or your favorite cut)
- 1/4 cup lime juice
- 1/4 cup orange juice
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 Scotch bonnet or habanero pepper, minced (optional for heat)
- 1 teaspoon thyme
- 1 teaspoon allspice
- Salt and pepper to taste
Recipe:
1. In a bowl, whisk together lime juice, orange juice, soy sauce, olive oil, garlic, onion, pepper if using, thyme, allspice, salt, and pepper.
2. Place chicken in a resealable bag or shallow dish and pour the marinade over it. Let it marinate for at least 2 hours, preferably overnight.
3. Preheat your grill to medium-high. Remove chicken from marinade and discard excess.
4. Grill chicken for 6 to 8 minutes per side or until juices run clear and the internal temperature reaches 165°F.
5. Let rest for a few minutes before serving.

Extra Toppings: Have Fun With This!
Swap the Scotch bonnet for a jalapeño if you want less heat.
