For me one of the best things to take when I'm attending a barbecue is a cold, colorful bowl of pasta salad.
It's one of those dishes that's easy to throw together, holds up well in the fridge, and goes with just about anything you're grilling. I like to make a big batch. I take some to the bbq and keep some for myself that I will snack on for days!
This version is simple, fresh, and endlessly customizable. Add your favorite veggies, swap in a different dressing, or toss in a protein like grilled chicken or tuna to make it a full meal.

Today's Recipe: Easy Summer Pasta Salad
INGREDIENTS:
- 12 oz rotini or bowtie pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1 cup cubed cheddar or mozzarella
- 1/4 cup chopped parsley or basil
- 3/4 cup Italian dressing (store-bought or homemade)
- Salt and pepper, to taste
DIRECTIONS:
Step 1: Cook pasta according to package instructions. Drain and rinse under cold water to stop cooking.
Step 2: In a large bowl, combine pasta, tomatoes, cucumber, onion, olives, cheese, and herbs.
Step 3: Pour dressing over the top and toss everything together until well coated.
Step 4: Chill for at least 1 hour before serving to let the flavors meld. Add extra dressing before serving, if needed.
