For me there is nothing like a juicy smash burger sizzling on a hot griddle to make my mouth water. There's something about that crispy-edged, deeply flavorful patty that represents the perfect burger to me.

If you've only ever had one at a diner or burger joint, you're in for a treat. This recipe walks you through how to make a real-deal smash burger at home. It is quick, simple, and loaded with flavor.

Today's Recipe: Classic Smash Burgers

INGREDIENTS:
- 1 lb ground beef (80/20 blend is best)
- Kosher salt and black pepper
- 4 burger buns, toasted
- Slices of American cheese
- Butter or mayo (for bun toasting)
- Your favorite toppings (lettuce, tomato, pickles, onion, etc.)

DIRECTIONS:
Step 1:
Divide beef into 4 equal portions. Roll each into a loose ball... do not pack tightly.

Step 2: Heat a cast iron skillet or griddle over medium-high heat until very hot. Lightly oil the surface.

Step 3: Place a ball of beef onto the skillet and immediately press it down firmly with a heavy spatula or burger press until very thin. Hold the press for 10 seconds to get a good sear.

Step 4: Season with salt and pepper. Cook for about 2 minutes, then flip. Add cheese and cook for another 1-2 minutes until melted and the edges are crisp.

Step 5: Toast buns with butter or mayo in the same skillet until golden. Assemble burgers with toppings of your choice.
