Read about our staffGreetings!

Sometimes, comfort comes in a bowl, and for me, a classic mac and cheese brings back memories of childhood dinners, that irresistible, creamy goodness. Its a dish that feels like a warm hug, and while there are countless variations, nothing beats a simple, perfectly cheesy version like my mom used to make.

Here's a straightforward recipe that delivers on all fronts: a rich, smooth cheese sauce, perfectly cooked pasta, and that golden, bubbly top. It's a guaranteed crowd-pleaser and easy enough for any weeknight.

Be Well,
Anisa

Step 1: Cook pasta according to package directions until al dente. Drain and set aside.

Step 2: In a large saucepan or Dutch oven, melt butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Step 3: Gradually whisk in the milk, a little at a time, until smooth. Continue whisking constantly for 5-7 minutes, until the mixture thickens and comes to a gentle simmer.

Step 4: Remove from heat and stir in salt, pepper, and ground mustard (if using). Add the shredded cheeses, a handful at a time, stirring until completely melted and smooth.

Step 5: Add the cooked and drained pasta to the cheese sauce. Stir gently until all the pasta is evenly coated. Serve immediately.

Extra Toppings: The Secret to a Smooth Sauce

Best Sell 5 StarThe key to a super creamy, lump-free cheese sauce lies in adding the cheese off the heat. When you add cheese to boiling hot liquid, the proteins can seize up, making your sauce grainy.

By removing the pot from the heat before adding the cheese, you allow it to melt slowly and evenly into the warm milk mixture, resulting in that perfectly smooth, luscious sauce everyone craves.
