Hello Foodie Friends

Even with the price of gas being so high it sure didn't seem to deter travelers. We ditched the traffic and stayed home but took full advantage of the grill we were prepared for that and with good side fixins too!

Grill or not this side dish / salad can stand along as an entire meal and people of all ages love it! I've been swapping the ground beef with ground turkey for some time now and nobody seems to notice but if you like beef swap it back. This has been one of the #1 most requested recipes for a long time when it comes to BBQs and picnic side dishes. I usually load up a little extra meat and cheese. No matter how big of a bowl I make I have yet to see leftovers.

TURKEY TACO SALAD

INGREDIENTS:
2 lbs ground turkey
2 packages taco seasoning mix
16 ounces cheddar cheese, shredded
1 red onion, chopped
1 yellow onion, chopped
2 heads iceberg lettuce, chopped
4 tomatoes, chopped
2 avocados, chopped
2 green peppers, chopped
1 can black olives, chopped
1 large bag of Doritos nacho chips, crumbled
1 8-ounce bottle Catalina salad dressing

DIRECTIONS:
Brown ground turkey with chopped yellow onion. Add 1 package of taco seasoning and water according to package directions. Set aside to cool completely. In a large bowl mix together chopped lettuce, tomato, cheese, avocado, red onion, peppers, olives, and 2nd package of taco seasoning. Add cooled meat mixture. Just before serving toss with the dressing and the last step is to mix in 3/4 of the package of crushed nacho chips, leaving the rest
on the side for people who want extra. (they get soggy if you do them too early.)

General Grill Safety Reminders:

One can never be too safe. What may be common sense to some is news to others, especially when you're breaking open your first grill.

* Position the grill on level ground. An unstable grill could fall or tip; make sure the legs and frame are not rusted or bent.

* The grills should not be under a balcony or deck; smoke or heat build-up is hazardous. If the balcony or deck is wood, a spark or grill flare-up of fumes can ignite.

* When cooking on a grill or hearth, keep fire extinguishers handy. Water from a bucket or garden hose will stamp charcoal, commercial fire extinguishers or a bucket of sand will extinguish most gas grills fires, and baking soda controls grease fires.

* An extinguished grill remains hot for several hours. Keep children away from the grill and don't attempt to move it until the grill is no longer warm.
