Hello Foodie Friends
Shout out to all of our Moms, Mom figures, grandmothers, aunts, sisters, cousins and friends who are Moms! You deserve the royal treatment this weekend it's all about you and thank you for all you do!
Fancy bonbons, truffles or artisan macarons? Sure those are great and I doubt anyone would refuse the splurge. However for a most thoughtful and delicious Mother's Day treat idea you can DIY it and make Mom some amazing chocolate covered strawberries. Easy to make and elegant presentation she will love. You could also buy these but making yourself adds that extra TLC.
Whatever you do make sure if you're able to call your ladies and show them your love!

CHOCOLATE COVERED STRAWBERRIES
INGREDIENTS:
1 dozen fresh strawberries with stems
8 oz semi-sweet or dark chocolate (good quality, chips or chopped bar are best)
Optional toppings: chopped nuts, shredded coconut, sprinkles, crushed freeze-dried fruit
DIRECTIONS:
Wash the strawberries and dry them completely. This step is important as any water can cause the chocolate to seize or not stick well. Place the semi-sweet chocolate in a microwave-safe bowl. Place chocolate in a heatproof bowl over a pot of simmering water (don’t let the bowl touch the water) and stir until melted.
* optional microwave method - Heat in 20-second intervals, stirring in between, until smooth. Be careful not to overheat or the chocolate will seize and there's no turning back.
Hold each strawberry by the stem and dip into the melted chocolate, swirling to coat. Let excess chocolate drip off, then place on a parchment-lined baking sheet to harden. While chocolate is still wet, dip or sprinkle with toppings if using. Let the berries sit at room temperature for about 30 minutes, or refrigerate for 15 minutes until the chocolate hardens.
These are best eaten the same day. If storing, keep in a single layer in an airtight container in the fridge for up to 1–2 days.
