They've got a fudgy brownie base, creamy mint layer tinted green and topped with a chocolate layer for the perfect St Patrick's Day dessert. Wash it down with a shamrock shake and you're all set.

LAYERED MINTY BROWNIES

INGREDIENTS:

Brownie Base
1/2 cup (1 stick) unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder

Mint Layer:
1/4 cup unsalted butter, softened
1 1/2 cups powdered sugar
2 tbsp heavy cream or milk
1 tsp peppermint extract
Green food coloring

Chocolate Topping:
1 cup semisweet or dark chocolate chips
2 tbsp unsalted butter

DIRECTIONS:
Preheat your oven to 350 degrees, Line an 8x8-inch baking pan with parchment paper or grease it lightly. In a large bowl, mix together the melted butter and sugar until combined. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract. Sift together the cocoa powder, flour, salt, and baking powder in a separate bowl. Gradually fold the dry ingredients into the wet ingredients, mixing until just combined.
Pour the brownie batter into the prepared pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Allow the brownies to cool completely in the pan.

In a bowl, beat together the softened butter, powdered sugar, heavy cream, and peppermint extract until smooth.
Add a few drops of green food coloring to give the mint layer a bright green color. Once the brownies are fully cooled, spread the mint layer evenly over the brownie base.

In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 20-30 second intervals, stirring in between, until the chocolate is fully melted and smooth. Pour the melted chocolate over the mint layer, spreading it evenly. Refrigerate the brownies for at least 1 hour to allow the chocolate to set.
Once the chocolate topping is firm, cut the brownies into squares and serve.

SHAMROCK SHAKE RECIPE

2 cups vanilla ice cream
1 cup milk
1/2 tsp peppermint extract
Green food coloring
Whipped cream for topping

In a blender, combine the vanilla ice cream, milk, peppermint extract, and a few drops of green food coloring. Blend until smooth and creamy. Pour the shake into glasses, top with whipped cream.

Classic Irish Coffee Recipe

1 cup freshly brewed hot coffee
1 1/2 oz (45 ml) Irish whiskey (ie. Jameson)
1 tsp brown sugar
Freshly whipped cream

Start by brewing a cup of strong coffee. You want a rich, bold flavor that can stand up to the whiskey and cream. To ensure your Irish Coffee stays hot longer, warm the mug by filling it with hot water for a minute, then discard the water. Pour the hot coffee into your warmed mug and add the Irish whiskey and brown sugar. stir until it's fully dissolved and top with whipped cream.

For an extra festive touch, you can garnish with a sprinkle of cocoa powder, nutmeg, or cinnamon.
