Hello Foodie Friends
There's nothing like the sweet aroma of cookies baking and although there are "bajillions" (my word) of different recipes out there I love to make and decorate sugar cookies with the kids. Here's a terrific HOLIDAY SUGAR COOKIE recipe today for decorating purposes. Just whip up a big batch of frosting and go to town just make sure they've cooled completely before you start adding the frosting. Take a tip from the frosting recipe further down as well you only need a few ingredients for this recipe which you may even already have on hand.
Now just gather up a bunch of different sprinkles and other candy decorations and invite some friends over to decorate. Hmmmm... I wonder who will have more fun the kids or adults?

SIMPLE HOLIDAY SUGAR COOKIES
INGREDIENTS:
3/4 cup solid vegetable shortening
1 cup granulated sugar
2 eggs
1 tsp vanilla
2-1/4 cups all-purpose flour
1-1/2 tsp baking powder
1/4 tsp salt
DIRECTIONS:
Cream shortening, sugar, eggs and vanilla in large mixer bowl at medium speed of electric mixer until light and creamy. Combine flour, baking powder and salt. Add to creamed mixture, mixing on low speed until well blended. Cover dough and chill 1 hour, if desired, for easy rolling. Preheat oven to 375 degrees. Roll half of dough at a time. Roll out dough on lightly floured surface to 1/4-inch thickness. Using a cookie cutter, cut in desired shapes. Place on ungreased baking sheets. Roll leftover pieces. Sprinkle with colored decorations or leave plain to decorate when cool. Bake at 375 degrees for 8 to 10 minutes, or until edges are light brown. (Time will vary with cookie size.) Cool slightly, then remove to cooling rack. Cool completely before decorating.
Yield: about 36 cookies: varies with cookie size

EASY ROYAL ICING RECIPE
1 1/2 cup powdered sugar
2 Tablespoons warm water
1/2 Tablespoon light corn syrup
1/8 teaspoon vanilla extract
* If you want to color your icing use gel colors they don't thin your frosting further
Place powdered sugar in a medium bowl and set aside. In a small bowl or glass measuring cup add the water, vanilla and corn syrup, stir until corn syrup is dissolved. Add sugar water to the powdered sugar and stir until completely combined. Mixture will be thick. The consistency you're looking for is a slowly dripping icing that disappears into the bowl within about 12 seconds. Add water by drop if you think it's too thick. If it becomes too thin, add more powdered sugar by the teaspoon. Use immediately.
