Hello Foodie Friends

I've made literally tons of batches of that Grandma Nestle's cookies we've all known so well and I actually have yet to come across someone who is not a fan. One of the things I love about them is the brown sugar flavor. Well I've discovered browned butter sugar cookies in they remain in my rotation as the perfect combo of both chewy and crispy with that rich nutty flavor! you basicelly brown the butter first and watch it carefully as it quickly goes from the browned to burnt and you don't want that.

An elevated version of sugar cookies you'll definitely want to give these a try. Feel free to experiment with double the dough per cookie if you really like them big, just add 8 to the pan to allow enough room for baking.

BROWN SUGAR COOKIES

INGREDIENTS:
1/2 cup butter, salted
3/4 cups sugar
1 large egg, room temperature
1 1/2 teaspoon vanilla
1 1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon nutmeg
2 tablespoon granulated sugar for rolling cookies

DIRECTIONS
Preheat oven to 350 degrees and line a baking sheet with parchment paper. Combine flour, baking powder, baking soda, salt and nutmeg in a small bowl and set aside.

To browning butter melt 1/4 cup of butter in a medium saucepan over medium. Continue to cook past the point of foaming until it turns a nice golden brown with a nutty smell. Do not walk away keep stirring and watching it to prevent burning. Pour into a bowl and allow to cool completely.

Place the butter and sugar in a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, about 3 minutes. Add egg and vanilla and mix on low until smooth, about 30 seconds.

Slowly add the flour mixture until combined being careful not to over mix. Scoop the dough into heaping tablespoons and roll in granulated sugar before adding to parchment lined baking sheet. Bake the cookies for 10-13 minutes, until light golden brown around the edges.

STORING AND FREEZING

Brown butter sugar cookies will remain fresh in an air tight container at room temperature for 2-3 days. Storing in the fridge is not suggested, it will dry them out.

You can freeze your cookies in an airtight container for 2-3 months with them remaining fresh. You can also freeze the cookie dough balls if you would like to bake them one at a time. Just allow them to sit out and thaw a bit while the oven is preheating.
