Hi All!

We're loading you up with a Chicken Kiev recipe for you which you can serve up with any of your favorite sides. It's simple but this breast of chicken is stuffed with a flavorful compound butter and fried, makes its own sauce; when you slice into the chicken, the melted butter is released onto the plate. Although a standard Kiev you can add a bit of cheese, chopped broccoli, cooked wild rice, a thin slice of ham and cheese, or whatever else you please to make it your own.

CHICKEN KIEV

INGREDIENTS:
4 large chicken breasts
4 tablespoons butter
4 cloves fresh garlic (crushed)
4 teaspoons lemon juice
2 eggs
1/2 cup milk
2 cups bread crumbs
1 teaspoon black pepper
1 teaspoon salt
a couple of dashes of dried parsley
toothpicks

DIRECTIONS:
Preheat your oven to 350 degrees. Pound your chicken until it is the same thickness through out the breast. Place some butter, the garlic, lemon juice and parsley in the center. Roll chicken up tight and seal it with tooth picks. Mix eggs and milk until smooth. Mix the bread crumbs, salt, pepper, and garlic together. Dip chicken on the milk/ egg mixture, and roll it in the bread crumbs. Bake 15-20 minutes or until they are golden brown and firm to the touch. Pull out toothpicks and serve.

THINGS TO KNOW ABOUT CHICKEN:

Always freeze uncooked chicken if it is not to be used
within 2 days.

Chicken should not be thawed on the countertop. It
takes about 24 hours to thaw a 4-pound chicken in the refrigerator. Cut-up parts, 3 to 9 hours.

Or for quick thawing of raw or cooked chicken use the microwave. Thawing time will vary according to your microwave.

Chicken may also be safely thawed in cold water. Place chicken in its original wrap or water-tight plastic bag in cold water. Change water often. It takes about 2 hours to thaw a whole chicken.
