Hey All!

Sometimes you just crave something sweet in the morning. You don't necessarily want to eat a candy bar first thing to start your day...it probably isn't the best or worst thing for you either but what's an easy way to justify having some chocolate? By adding fruit and oats of course!

These healthy ingredients including oats, bananas, and a handful of chocolate chips with no added sugar or flour allows you to have some cookies for breakfast guilt free!

If you want, you could replace the chocolate chips for raisins, craisins, or whatever! These are great for breakfast, snack or any time you crave a sweet healthy treat.

CHOCOLATE CHIP OATMEAL BREAKFAST COOKIE

INGREDIENTS:
2 medium ripe bananas, mashed
1 cup of uncooked quick oats*
1/4 cup chocolate chips

DIRECTIONS:
Preheat oven to 350°F. Spray a non-stick cookie sheet with cooking spray or use a silicone baking mat (my preference).

Combine the mashed bananas and oats in a bowl.

Fold in the chocolate chips and place a tablespoon of each on the cookie sheet.

Bake 15 minutes. Makes 16 cookies.

Yield: 8 Servings

Baking Tips:

I personally think these are best eaten warm, right out of the oven. They taste almost like mini banana bread muffins, the texture is soft and chewy, not crisp like a dessert cookie.

The riper your banana the better, so make these when your bananas are almost black and freckled with dark spots.
