Hi All!

Scones are no longer just a biscuit that the English serve with afternoon tea. They can be found in coffee shops and bakeries all over the world. Generally made using milk, scones now contain cream, buttermilk, sour cream, or yogurt depending on the richness and sweetness you desire. Dried or fresh fruit, chocolate, herbs, cheese and vegetables are samples of what you now see added to scones.....the combinations are just endless. Whether you brew up some morning gourmet coffee or steep a pot of afternoon tea, take a moment to enjoy this CRANBERRY-WALNUT SCONES recipe.

CRANBERRY-WALNUT SCONES

1 cup dried cranberries or seedless raisins
1 cup boiling water
4 cups all-purpose flour
1/2 cup sugar
3 tablespoons DAVIS Baking Powder
3/4 cup margarine or butter
1 cup walnut pieces, toasted and chopped
1 cup plain lowfat yogurt
1 cup heavy cream
1 egg, beaten

DIRECTIONS:
Mix cranberries or raisins and water; let stand 10 minutes
to plump. Drain. Mix flour, sugar and baking powder; cut in
margarine or butter until mixture resembles coarse crumbs.
Add walnuts and cranberries or raisins. Stir in yogurt and
heavy cream until mixture is moistened. Divide dough into 3
pieces. Pat each piece into a 6-inch round. Cut each round
into 8 wedges. Place on ungreased baking sheet 2 inches
apart; brush with beaten egg. Bake at 350°F for 15 to 18
minutes or until lightly golden. Serve warm.

Yield: 2 dozen
Per Serving (1 scone): 267 calories, 5 g protein, 30 g
carbohydrate, 15 g total fat, 4 g saturated fat, 23 mg
cholesterol, 209 mg sodium, 1 g dietary fiber

MARZEE's CORNER


The sweetness of the scones, combined with the thick cream
and jam is wonderful. Devonshire or Clotted Cream is a rich,
thick cream that is produced by skimming the thick cream that
forms on the top of unpasturized whole milk when heated.
It is found primarily in England, but Double Devon Cream
(made in England) can be found in a lot of specialty food
stores. Here's the recipe Sis....knew I'd find this favorite
for you!

DEVONSHIRE CREAM:
1/2 cup mascarpone cheese (or cream cheese)
1/2 cup heavy whipping cream
2 tablespoons confectioners sugar

Place mixing bowl and beaters in the freezer for 10 minutes.
Combine all the ingredients in mixing bowl and beat on medium-
high speed until stiff peaks form. Serve immediately or
refrigerate for a few hours. After refrigerating you'll need
to rewhip cream before serving.
