Hi All!

When it comes to cream cheese appetizers I probably take the cake I sure don't need excuses to make these and this one has got pineapple in it too! This is pretty much one of the first things to go at parties and is best enjoyed over crackers, bagel chips or pretzels. Even better add some freshly slices of pineapple along with it too. So Simple! And I have some other ideas for pineapple and sweets below too.

PINEAPPLE CHEESE BALL

INGREDIENTS:
2 packages (8 ounces each) cream cheese, softened
1 can (8 ounces) crushed pineapple, drained
1/4 cup finely chopped green bell pepper
3 tablespoons finely chopped green onion
2 teaspoons seasoned salt, or to taste
2 cups chopped pecans, divided

DIRECTIONS:
Combine cream cheese, drained crushed pineapple, chopped
bell pepper, chopped green onion, seasoned salt, and 1
cup chopped pecans. Chill in refrigerator until firm then
shape into a ball. Just before serving roll pineapple
cheese ball in remaining cup of pecans. Serve pineapple
cheese ball with assorted crackers. Pineapple cheese ball
makes about 3 cups of cheese spread.

Yield: 3 cups

Summer19MARSHMALLOW FLUFF RECIPE IDEAS FOR FRUIT DIPPING:

Just mix together1 jar of marshmallow fluff and 1 small container of pineapple cream cheese. Mix them together and chill for a fruit and angel food cake dip. Here are some variations from our readers I thought worth mentioning...

* just add sour cream to the fluff.....mmmmmmmm good equal parts fluff and sour cream.

* I make "fluff" by putting a cup of sugar, an egg white, and a cup of berries in a mixing bowl and mix (starting on low and building up to high) until it become thick and fluffy. I usually use blackberries or strawberries, but raspberries or other berries would work equally well. Just keep beating the mixture until it is a beautiful, pale, pastel shade of pink or lavender. Then use it over angel food cake - or for dipping fruit. My family LOVES it! Since I haven't made it for a long time - and since all three grandkids are here - guess what's on the menu tonight!!! Try it! It's finger-lickin' good!

* I've always used the plain cream cheese and added fresh
lemon juice to my fluff.
