Hello all!

"You don't have to be a four-star chef to eat like a gourmet"

HAPPY BIRTHDAY TO ME! A little early it is actually tomorrow but I'm starting early to get a jump on Mother time ;o) I enjoyed some yummy Portillo's cake at the office with everyone today and have a nice weekend planned with Mother's Day too! All the Mommas and ladies who are mother figures in someone's life we appreciate you and hope you have a fabulous Mother's Day too give yourself a big hug! For all you do for f us everyday that goes unnoticed and this is your day to be appreciated in a special way. Whether you treat Mom to her favorite restaurant, create a culinary creation with your own 2 hands, or something else I'm sure she would even appreciate giving her a call if she is away or a big hug if you get to be with her!

Not gonna lie, part of me would just love to snuggle up with a pillow and have a PJ day my Hallmark movie marathons too and eat ice cream. Can I get a little support here?

Here is a fitting recipe for a sunshiney BREAKFAST CASSEROLE not just Mom but the whole family will love. You make it the night before and just put in the oven in the morning.

BREAKFAST CASSEROLE

Kitchen 2019INGREDIENTS:
6 eggs
1 cup milk
6 oz. cheddar cheese, grated
1-lb sausage or bacon, crumbled
4 Hash brown patties, frozen
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dry mustard
1/2 cup chopped onion

DIRECTIONS:
Line an 8x8 baking dish with frozen hash browns. Sprinkle
hash browns with crumbled sausage or bacon. Mix together
eggs, milk, salt, pepper, and dry mustard. Pour over meat
and hash browns. Top with grated cheddar cheese. Refrigerate
overnight. Bake in a preheated oven at 350 degrees for 45
minutes to 1 hour.

Yield: 4-6 servings
