Hi All!

Luck O' the Irish to all of my friends celebrating St. Patrick's Day this weekend and to all! I love hitting the parade and in Chicago they dye the river green! I have kiddo suff this weekend so will have to catch it on TV (The twins are 14 now but I still call them my kiddos or peeps ;o)

Not everyone wanting the corned beef and cabbage or those grilled Reuben flavors of corned beef with sauerkraut, Swiss cheese and Thousand Island dressing on rye bread actually has the time to cook and put that all together?

Today's recipe is not great for hitting the flavors as an appetizer or snack but is also a fantastic recipe idea for using up any leftovers leftovers. This REUBEN DIP APPETIZER variation is served with rye bread cubed up, those little rye breads or even your favorite crackers or rye chips. Serve it straight out oven and make sure you've got a nice big drink nearby. This is a cinch for anyone to make.

Why is it even called corned beef?
It has nothing to do with corn actually. The term "corned" comes from the English and it refers to small particles. "Corn" refers to the larger-grained rock salt, which is used to cure the beef. The brisket is cured for hours in a brine of water, salt, spices and preservatives and can also be injected with the brine. Some producers of corned beef add their own blends of spices.

REUBEN DIP

New Sale 2019INGREDIENTS:
3/4 cup mayonnaise
1/4 cup Thousand Island dressing
1 14-ounce can sauerkraut, well rained
1 8-ounce package shredded Swiss cheese
1 pound diced corned beef
hot mustard (optional for topping)

DIRECTIONS:
Mix all ingredients together and put in a greased baking dish. Bake at 400 degrees for 30 minutes until bubbling and cheese has browned. Serve hot with party rye bread or crackers and hot mustard on the side.

SOME IRISH TRIVIA: WHAT IS THE BLARNEY STONE?

The Blarney Stone is a stone set in the wall of the Blarney
Castle tower in the Irish village of Blarney. Kissing the
stone is supposed to bring the kisser the gift of persuasive
eloquence (blarney). Thousands of tourists a year still
visit the castle.

The origins of the Blarney Stone's magical properties aren't
clear, but one legend says that an old woman cast a spell on
the stone to reward a king who had saved her from drowning.
Kissing the stone while under the spell gave the king the
ability to speak sweetly and convincingly.

It's tough to reach the stone -- it's between the main castle
wall and the parapet. Kissers have to lie on their back and
bend backward (and downward), holding iron bars for support.
Can you imagine kissing something that has had people's lips
all over it for 500 years?
