Hi All!

Holy cow I overdid Fat Tuesday a little yesterday, I didn't have the king cake or pasckis (punch-keys) but my lovely daughter made a big batch of carrot cake cupcakes iced with cream cheese frosting and while I won't admit how many I had it was definitely more than 1 oops! She made them look so pretty and even garnished with chopped nuts I just couldn't resist... and all that was before dinner oops!

It's a good idea to slip fish into your diet every week but many people who love fish are afraid of preparing it. Well, this EASY LEMONy FISH recipe can be your life-saver because it's light and east to prepare. This also incorporates a unique product called imitation butter spray that's pretty available most everywhere these days (like the "I can't believe it's not butter" brand) for those of you who are watching your waistline.

LEMON BAKED FISH

Super Sale1lb. fish fillets of your choice
1/4 cup chicken broth
4-6 lemon slices
20 sprays of immitation butter spray
1/8 tsp. pepper
1 tbsp. dried parsley

DIRECTIONS:
Preheat oven to 450 degrees. Arrange fish in a 9x13" baking dish. Top with remaining ingredients. Bake fish, uncovered, for 10 minutes per inch of thickness, or until fish flakes easily with a fork.

FISH COOKING TIP:

Never overcook. Cooking fish at too high a temperature or
for too long a time can toughen the fish and destroy natural
moisture and flavor. Overcooking is the most common mistake
in fish and seafood cookery. Fish loses its translucent
appearance and becomes opaque when thoroughly cooked. Pierce
the fish at the thickest point. If it flakes easily and the
flesh falls from the bones, you know it is done.
