With all those BBQ and picnics are you trying to avoid
snacking on too much of those snacks with "os"? (you know
the Fritos, Doritos, Cheetos...which are "oh" so addicting)
Make some hearty whole wheat & sweet banana bread for
snackin'. This stuff is great because it travels well and
is perfect for snack attacks anytime. We love things like
this in the morning with a cup of coffee to quiet the tummy
and it hits the spot with milk or coffee. This bread keeps
4 to 5 days and also freezes well.

RECIPE: HEARTY WHOLE WHEAT & SWEET BANANA BREAD

INGREDIENTS:
Topping:
1/2 banana, chopped
1/2 cup rolled oats (not quick-cooking or instant)
1/4 cup light brown sugar
Bread:
1 cup whole wheat flour
1 cup all-purpose flour
1/2 cup light brown sugar
2 tsp. baking powder
1/4 tsp. salt
2 ripe medium bananas
2 eggs, lightly beaten
1 cup lowfat buttermilk
1 Tbsp. canola oil
DIRECTIONS:
Preheat oven to 375 degrees. Spray a 9x5x2 1/2 inch loaf
pan with cooking spray. In small bowl, combine topping
ingredients. Set aside. In large bowl, whisk together
flours, remaining sugar, baking powder and salt to combine.
In another small bowl, mash bananas. Mix in eggs, buttermilk
and oil. Stir wet ingredients into dry ones, mixing just
until combined. Pour batter into prepared pan. Sprinkle
topping evenly over batter. Bake until knife inserted into
center of bread comes out clean, 45 to 50 minutes. Let loaf
rest in pan 10 minutes. Turn out onto baking rack and cool
completely. Serve or wrap in foil and use later.

WHAT TO DO WITH OVERRIPENED BANANAS?
* Peel and mash them to use in a quick banana bread or
even a corn bread recipe. Mashed bananas over pancakes
are mighty tasty and you save some of the calories, too.
A great idea for mashed bananas is to top your cooked
cereal in the morning.
* Peel and cut into 1-inch chunks and put in a the blender
with some soy milk, dates, raisins, and a little cinnamon.
A tasty shake like this can help get you going in the
morning.
Don't toss them! Mashed bananas can be frozen in a plastic
zip bag for a quick grab for recipes or even smoothies in
a pinch.
