Long weekend and fun fun fun as we hit even more festivals
they even have a new 'Wizard of Oz' theme going out here...
I loved that movie (and scared the cayenne out of me at the
same time) but hard to believe there is an entire fest
geared dedicated to this popular movie.

I heard about an idea where you roast a marshmallow with a
caramel candy stuffed inside, then cool it before eating
so it's not hot lava temperature. That's kind of like the
Fannie May car-marsh or however you spell it. I'm trying
this weekend and will let you know how it turns out.

Here's an oldie but goodie for you I remember when these
things first came out with the Outback chain restaurant
and I still think they are amazing (and will kill the cayenne
out of your diet at the same time). The BLOOMIN' ONION
is a giant onion ring-thing cut in pieces to pull apart.
They're addicting and I've seen gadgets all over television
and magazines just to cut up the sweet onion for this. Here's
a recipe for those of you that do or do not have that "thingy"
and want to give it a go.

I have to admit this is FUN FOOD!

RECIPE: BLOOMIN' FRIED ONION

INGREDIENTS:
Batter-
1/3 cup cornstarch
1 1/2 cups flour
2 teaspoons minced garlic
2 teaspoons paprika
1 teaspoon salt
2 teaspoons pepper
1 1/2 cups beer
4 vidalia or Texas SWEET Onion (important)

Flour Mix-
2 cups flour
4 teaspoons paprika
2 teaspoons garlic powder
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
(Combine and mix well)

Creamy Chili Sauce-
2 cups mayonnaise
1 pint sour cream
1/2 cups chili sauce
1/2 teaspoon cayenne pepper
(Combine and mix well)


DIRECTIONS:
Mix cornstarch, flour, and seasonings until well blended.
Add beer, mix well. Cut about 3/4 inch off top of onion
and peel. Cut into onion 12 to 16 vertical wedges but do
not cut through bottom root end. Remove about 1 inch of
petals from center of onion. Separate the onion petals
just slightly, too much will destroy the onion. Dip onion
in seasoned flour remove excess by shaking. Separate
petals to coat thoroughly with batter. Dip in batter. Dip
in flour mixture again. Gently place in fryer basket and
deep-fry at 375 to 400 for 1 1/2 minutes. Turn over, and
fry an additional 1 1/2 minutes. Drain on paper towels.
Place onion upright in shallow bowl and remove center core
with circular cutter or apple corer. Serve hot with creamy
chili Sauce.

NO MORE TEARS

To reduce tearing when peeling or slicing an onion, chill for
30 minutes or cut off the top, but leave the root on. The root
has the largest amount of sulfuric compounds, which is what
causes tears when the onion is peeled or cut. Remove the root
prior to cooking or eating.

Prolonged cooking takes the flavor out of onions. Cook only
until they're tender when tested with a fork.
