*** A WORD FROM THE KITCHEN ***How are my football fans out there? Had enough yet or
looking forward like the rest of the crowd to SuperBowl?
I'll admit I'm actually more of a fan of the parties than
the game regardless of who ends up playing because there
is always a lot of food and fun! If you're like me you're
not wandering aimlessly through the super-store aisles for
things that come in packs of twenty or more...but digging
through that collection of recipes and that "special" equipment
for the big game-day food. Like that huge kettle for pounds
and pounds of chili or like me that football helmet chip-and-
dip holder...a mail order prize. The best are the appetizers
of course and a fitting one is this recipe for BAKED TATER
SKINS. Add whatever additional toppings you like of course
but here's your starter recipe.

RECIPE: BAKED TATER SKINS*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~
INGREDIENTS:
8 baking potatoes (about 1/2 pound each), scrubbed, patted
dry, and rubbed with olive oil
olive oil
sweet paprika
sea or kosher salt
sour cream, if desired
DIRECTIONS:
Prick the potatoes a few times with a fork and bake them in
a preheated 425 degrees for 1 hour. Let cool, halve lengthwise,
and scoop them out, leaving a 1/4-inch shell and reserving the
potato pulp for another use. Cut each shell lengthwise into 6
strips and arrange the strips on a baking sheet. Brush the
strips with the oil, sprinkle with paprika, salt, and pepper
to taste, and bake in preheated 425 degree oven for 20 to 25
minutes, or until they are crisp and golden brown. Serve the
potato skins with the sour cream.

LOOKING TO LIGHTEN UP THE SNACKS? Here are a few tips
that those couch potatoes will never notice....
* Toast fresh pita bread and cut into triangles. Arrange
on plate with few black olives and serve with a low-fat
hummus or salsa.
* Vertically slice a loaf of French or Italian bread and
fill with lean deli meats. Add red or green peppers.
Slice off a sandwich at a time.
* Surround a slow cooker of soup with low-fat wheat,
cheese, onion and saltine crackers.
* Layer pumpernickel or rye with lean turkey and low-fat
colby cheese, shredded lettuce and tomato slices. Add a
dab of spicy mustard, a sprinkle of oregano, a dash of
vinegar and serve.
* Line a football helmet with a cloth napkin and fill with
a variety of lower-fat crackers, pretzels, dry-roasted
peanuts and raisins.
