That makes me wonder when the next fishing trip is I
could really use some walleye fillets the kids actually
love it too ;o) Meantime I can get some shrimp and
do a down-home SPICY SHRIMP BAKE recipe it needs only
some of your Favorite rice cooked up on the side and
voila! Not many circuses to this meal, just good old
taste.

RECIPE: SPICY SHRIMP BAKE

INGREDIENTS:
1 cup butter or margarine, melted
3/4 cup lemon juice
3/4 cup Worcestershire sauce
1 tablespoon salt
1 tablespoon coarsely ground pepper
1 teaspoon dried rosemary
1/8 teaspoon ground red pepper
1 tablespoon hot sauce
3 garlic cloves, minced
2 1/2 pounds unpeeled large or jumbo shrimp
2 lemons, thinly sliced
1 medium onion, thinly sliced
fresh rosemary sprigs

DIRECTIONS:
Combine first 9 ingredients in a small bowl; set aside.
Rinse shrimp with cold water; drain well. Layer shrimp,
lemon slices, and onion slices in an ungreased 13x9x2-inch
baking dish. Pour butter mixture over shrimp. Bake
uncovered, at 400 for 20 to 25 minutes or until shrimp turn
pink, basting occasionally with pan juices. Garnish with fresh
rosemary sprigs.

YIELD: 6 SERVINGS

JUST WHEN IS THE FISH OFFICIALLY COOKED?

It is very easy to tell when fish is done. All you have to
do is break a piece in half and see if it has cooked all the
way through. You can tell by the color change. If you have
thick pieces, you can watch the color change on the side
travel to the middle. Flip and watch the fish cook through
the opposite side. You are done when it reaches the middle
and it is the same color all the way through. Do not give
it an extra minute or two for good measure or you will
overcook it.

If you batter the fish before cooking, you will have to
sacrifice a piece to test by breaking it in half to check
it. Time it so you will know how long to cook the rest.
This won?t take long. Fish cooks very fast and high heat
is fine.
