Seems like everyone around here has been hitting island
vacations and makes me think of all the fun we've had
hopping around to different islands as well. Although it
has been a long time and before we had kids I can go
back there in my mind in a heartbeat. (although somehow
the slurpee at the 7-eleven doesn't compare to the
bottomless 'special' slushies at the resort ;o)

At least we're lucky to be within driving distance of
several beaches and I ust love taking my big ol' hat
and hitting the sand!

You don't actually have to travel far for some fun in
the sun and a nice chilly drink is always a beat-the-heat
refresher. Here's a great couple of recipes you can
give a go that are especially great for summertime.

RECIPE: Watermelon Berry Slush

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*

INGREDIENTS:
1 cup cubed seeded watermelon
1 cup ginger ale or lemon-lime carbonated beverage
2 Tbsp frozen (thawed) limeade concentrate
1 cup frozen unsweetened strawberries

DIRECTIONS:
In blender or food processor, process watermelon,
carbonated beverage and limeade concentrate until
liquefied. Gradually add frozen strawberries blending
just until slushy. Serve immediately.

Yield: 4 servings

BONUS RECIPE: TROPICAL BLENDED ICEE

1 can (11.5 oz.) tropical fruit juice concentrate
(these are a great item found in juice aisles at most stores)
2 bananas, broken into pieces
2&1/2 cups ice cubes

DIRECTIONS: Place all ingredients in blender jar; cover.
Depending on the settings of your blender crush or blend
for about 1 minute or until desired consistency is reached.
