*** A WORD FROM THE KITCHEN ***

We paraded for St. Patrick's Day in the rain last
year with the kids' scout troops and there are more
this weekend but we're opting for a little more
laid back and enjoying our corned beef and cabbage
dinner with the family this weekend. There will be
plenty of green flowing like the Chicago river and
many filled mugs I'm sure. We enjoy setting our
leprechaun trap with the kiddies and they sure hope
to catch ourselves one this year so we can get some
of that little guy's gold in exchange for his release!
Funny how I never heard of that until I had kids?
Then agian I was new to Elf on a Shelf for Christmas
too.

Well luck O' the Irish to you all! If you need
something to make or bring for parties or just want
to dig some corned beef leftovers you may have here
is a variation on the Reuben whipped into a dip.
Load it up on some party rye bread or your favorite
crackers and make sure you've got a nice big drink
nearby. This is a cinch for anyone to make.

RECIPE: REUBEN APPETIZER DIP

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~

INGREDIENTS:
1 cup mayonnaise
1 16-ounce can sauerkraut, well rained
1 8-ounce package Swiss cheese, shredded
1 large package chopped corned beef
hot mustard (optional for topping)

DIRECTIONS:
Mix all ingredients together and put in a greased
baking dish. Bake at 350 degrees for 25 minutes.
Serve with party bread or crackers and hot mustard
on the side for topping.

IRISH COFFEE SUPREME RECIPE:

1 1/2 oz Irish Whiskey
1 tbsp brown sugar
2 oz heavy cream
coffee
float green creme de menthe

Fill glass with hot water to pre-heat then empty.
Pour piping hot coffee into warmed glass until it is
about 3/4 full. Add 1 tablespoon brown sugar and stir
until completely dissolved. Blend in Irish Whiskey.
Gently top with a collar of slightly whipped heavy
cream by pouring gently over a spoon. Color with
creme de menthe and enjoy while piping hot.
