I read a quick insert in one of my magazines
about letting your food cool down before placing the leftovers
in the refrigerator. Read below:
According to Peter Snyder, PH.D., a food safety
consultant in Minnesota says letting hot foods cool uncovered
for 30 minutes before putting them away is actually safer than
rushing them into the refrigerator. Here's why: Immediately
refrigerating hot dishes can actually cause harmful bacteria to
multiply. That's because it takes longer for the temperature in
the middle of a container to drop. And the cold exterior
combined with a hot interior creates a warm, moist environment
where bacteria thrive, he says.
