*** A WORD FROM THE KITCHEN ***

Top of the mornin' to ya! I usually go for my traditional
Shamrock Shake at McDonalds on this day but I haven't heard
if they're having them again (remember I don't get out much
anymore?) I don't really NEED one anyway but I used to like
to ask them to do 1/2 chocolate and 1/2 Shamrock...chocolate
mint was great. They just don't make them like they used to
though (just like the fries?) it's not the same ice cream
used as when we were all kids. Well St. Patrick's Day is
next week and there are already parades and parties this
weekend and the corned beef and cabbage is a plenty. I have
to throw in a potato recipe for good time sake but this one
is a "super soup" idea. The beer adds a unique flavor to
this potato soup recipe. Hey I just thought of another idea
too.. cube up and toss in a little of that leftover corned
beef too.

RECIPE: TIPSY POTATO SOUP

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*

INGREDIENTS:
2 TB butter
1 Tsp.garlic
1 bunch green onions, chopped
1 stalk diced celery
6 cups boiled diced potatoes
32 ounces beer
1 TB sugar
1 TB chicken boullion
64 oz. chicken stock
Few TB flour to thicken
4 cups cream
salt and pepper to taste

DIRECTIONS:
Saute garlic in butter for 1 minute, add vegetables and
saute for 3-5 minutes or until tender. Add potatoes and
beer and bring to a boil. Mash potatoes against sides of
pot. Add sugar, stock, boullion and salt and pepper. Add
flour and stir until thickened. Add cream, stir and serve.

YIELD: 10 Servings
