*** A WORD FROM THE KITCHEN ***Now that the kids are pretty much all back in school
it got me thinking about the recent high school graduates
going away to school for the first time. Any of you have
family or friends newly off to college? You might really
want to consider sending letting them know you're thinking
about them by sending a care package. I know many kids
desperately look forward to these...especially when all
they have (it they're lucky) is a dorm microwave and mini
fridge and of course they're saving their quarters for the
laundry.
So get your "starving students" through their studying by sending munchies and other surprises though the mail. They will love you for it! Here's a yummy one for homemade CARAMEL CORN treat that's a blast with kids and adults alike.

RECIPE: BIG BATCH OF HOMEMADE CARAMEL CORN*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~
INGREDIENTS:
1 cup butter
2 cup brown sugar
1/2 cup corn syrup
1 tsp salt
1 tsp vanilla
1 tsp baking soda
6 quarts popped, unflavored popcorn
2 cups unsalted peanuts or mixed nuts
DIRECTIONS:
Melt butter; stir in brown sugar, corn syrup,
and salt. Bring to a boil, stirring constantly.
Boil without stirring; 5 minutes. Remove from
heat; stir in baking soda and vanilla. Gradually
pour over popped corn, mixing well. Turn into 2
large cookie sheets and bake in a 250 degree oven
for 1 hour, stirring every 15 minutes. Remove from
oven and cool completely. Break apart and enjoy.
Yield: 5 quarts of caramel corn

SNACK REVIEW: Everyone remember CRACKER JACK? This was a favorite
childhood snack of mine....did you know?
In 1893 According to legend, a unique popcorn, peanuts and
molasses confection that was the forerunner to Cracker Jack
caramel coated popcorn and peanuts is introduced by F.W.
Rueckheim and Brother, at the World's Columbian Exposition,
Chicago's first World's Fair.
In 1896 Louis Rueckheim, F.W.'s brother and partner, discovers
the process for keeping the molasses-covered popcorn morsels
from sticking together. Louis gives the treat to a salesman
who exclaims, "That's crackerjack!" "So it is," says F.W.
Rueckheim, who then has the words trademarked.
In 1908 The song "Take Me Out to the Ball Game" is written
by Jack Norworth, who writes the lyrics during a 30-minute
subway ride, and Albert Von Tilzer, who composes the music.
Cracker Jack brand is immortalized with the third line,
"Buy me some peanuts and Cracker Jack."
In 1912 "A Prize in Every Box" is introduced when toys are
inserted into every package.
In 1918 Sailor Jack and his dog, Bingo, first appear on
packages.
In 1955 Cracker Jack begins advertising on television with
the appearance of Cracker Jack on CBS-TV's "On Your Account"
which is televised to 130 stations nationally.
