It's a delicious PENNE PASTA WITH PORTABELLO & CHEESE
we're serving up today to spice up your dinner table.
Once your noodles are cooked this dish is also easily
prepared using the microwave. You can play with the
crushed red pepper amount if you're shy of the spice
factor. I highly recommend going to the extra expense
of these portobello mushrooms since there is a huge
difference in the flavor.

RECIPE: PENNE PASTA WITH PORTOBELLO & CHEESE

INGREDIENTS:
2 tablespoons Chopped onion
2 Garlic cloves, minced
1 teaspoon Olive oil
1 cup portobello mushrooms sliced
1 cup Canned Italian tomatoes, chopped & reserve liquid
5 small black olives, sliced in half
1/8 teaspoon Crushed red pepper
2 cup Cooked penne pasta
3 teaspoons fresh grated parmesan cheese
Fresh basil leaves for garnish
DIRECTIONS:
In a 3 quart microwavable casserole, combine onion, garlic
and oil and stir to coat. Microwave on high (100%) for 1
minute. Add mushrooms and tomatoes with reserved liquid and
stir to combine. Cover and microwave on high for 7 minutes,
stirring once every 3 minutes. Add olives and pepper and stir
thoroughly. To serve, in serving bowl arrange pasta; top with
mushroom-tomato mixture and toss to combine. Sprinkle with
cheese and garnish with basil.

MORE ON PORTOBELLO MUSHROOMS:
Portobello mushrooms are a "cousin" of the commonly cultivated
white mushroom. They can grow to be extremely large, however,
and have a dark brown color, a flat cap and a tough, woody stem.
The fully mature mushroom has a large number of exposed "gills"
on the underside of the cap, which causes the mushroom to lose
moisture; this moisture loss results in a more concentrated flavor.
Their size (they're commonly as large as six inches in diameter)
and strong, "earthy" taste make them popular substitutions for
beef in vegetarian recipes. It is common to grill Portobellos
and serve them as you would hamburgers, with all of the fixings.
They also make great fajita stuffers.
