I supposed I just have salads and side dished on the brain
and I know it's easy to get stuck in a rut of purchasing
or preparing the same old mechanical recipes and I say
that's when you just have to take a moment to step out
of your zone and try something new. This Pasta & Walnut
Fruit Salad recipe is the perfect partner to take that
dance let me know what you think about this one. Kinda
sorta along the lines of a Waldorf.... waldorfy pasta
salad sounds a little goofy though. Go ahead it couldn't
be easier and the pasta gives it that something substantial
too.

I typically like to do something like this plattered just
for presentation (Tammy knows right?) but don't be shy
of the god old disposable foil pan this recipe stands
on it's own.

RECIPE: Pasta & Walnut Fruit Salad

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*

INGREDIENTS:
8 ounces shell macaroni, uncooked
8 ounces plain yogurt
1/4 can frozen orange juice concentrate, thawed
15 ounce canned mandarin oranges, drained
1 cup red seedless grapes
1 cup seedless white grapes
1 cored, diced red apple
1/2 cup celery, sliced
1/2 cup walnut halves
lettuce, for garnish
strawberry, for garnish

DIRECTIONS:
Cook pasta according to package directions. Chill in cold
water and drain well. Blend orange juice concentrate and
yogurt well. Toss mixture with remaining ingredients and
pasta. Cover and chill thoroughly. Serve on a bed of lettuce.
Garnish with fresh strawberries.

Yield: 8 Servings

TRIVIA TIME:
WHAT IS A "WALDORF SALAD" ANYWAY?

If you're among the many people who've wondered why they
call it that, wonder no more...I found the answer:

Waldorf salad [WAWL-dorf] Created at New York's Waldorf-
Astoria Hotel in the 1896 not by a chef but by the maitre
d'hotel Oscar Tschirky, the Waldorf salad was an instant
success.the original version of this salad contained only
apples, celery and mayonnaise. Chopped walnuts later became
an integral part of the dish. Waldorf salad is usually
served on top of a bed of lettuce.
