Were you able to jump start the year eating right? I know
better than anyone that's no easy task especially if you're
working and don't have lots of spare time on your hands.
With all of those fantastic storage containers available
one thing I do find helpful is pre-cutting up an assortment
of mini salad-bar items...just as much as you will consume
within the week that make it easy to assemble a quick salad
in no time. Today I bring you a recipe for a LIGHTER CAESAR
SALAD (a non-anchovy version but feel free to add those)
that is a quick and healthy standby to add to any meal.

RECIPE: LIGHTER CAESAR SALAD
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*
INGREDIENTS:
1 large head romaine lettuce
3/4 cup olive oil
1/4 cup red wine vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1 clove garlic, crushed
1 lemon, halved
fresh ground black pepper
1/4 cup freshly grated Parmesan cheese
garlic croutons
DIRECTIONS:
Wash romaine under cold running water. Trim core, and separate
stalk into leaves; discard wilted or discolored portions. Shake
leaves to remove moisture. Place romaine in a large zip-top
plastic bag; chill at least 2 hours. Combine olive oil and next
4 ingredients in a jar. Cover tightly, and shake vigorously.
Set aside. Cut coarse ribs from large leaves of romaine; tear
leaves into bite-size pieces, and place in a large salad bowl.
Pour dressing over romaine; toss gently until coated. Squeeze
juice from lemon halves over salad. Grind a generous amount of
pepper over salad; sprinkle with cheese. Toss, top with garlic
croutons and serve.
Yield: 4 Servings

SALAD TIDBITS:
If you are serving a big group and don't have the time to make
a fresh salad, here's how to make a tossed salad the day before
and keep it FRESH:
Make the salad the day before and then place the salad into
buckets with lids or big bowl and completely cover the salad
with water. Store in the fridge. Drain well before serving.
Salad will be fresh and crisp the next day.
Ingredient ideas: lettuce, cucumbers, radishes, cabbage,
green onions, celery, broccoli, cauliflower, green or red
peppers, carrots, red cabbage. * only add tomatoes just
before serving!
