Oh my is it already time to get gardening? I used the
gas tiller for the first time Hubby heard some wood
get hit a few times but hey that thing was heavy.
We don't have a very large space but I try to get
a few good things in there. Last year was a
disappointment for gardens all around us but I know
this'll be the one. I got the kids all fired up too
as they helped me finish prepping the area. They
each get to choose what we're growing and I sure hope
it helps them eat those veggies! Let me know if
anyone has tips on sweet grape tomatoes varieties
I think it may have been the Juliets that were like
candy. So far we just grow from the small seedlings
we haven't quite graduated to seeds yet. As I wish
for more gardening space I may even supplement with
continers strewn about in sunny patches. I'm a big
fan of the tomatoes and today's soup recipe is a great
way to enjoy them anytime of the year.

RECIPE: TOMATO BASIL SOUP
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*=
~*~*~*~*~*~*~*~*
INGREDIENTS:
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 onion, chopped
2-3 cloves garlic, minced
1 teaspoon sea salt
2 cups chicken or vegetable stock
1 14.5 ounce can chopped tomatoes
1 tablespoon honey
¼ cup sour cream
¼ cup finely chopped fresh basil
Freshly ground black pepper
DIRECTIONS:
Heat oil and butter in a 4-quart pot over medium heat.
Add onion, garlic and salt and sauté until onions are
soft and translucent. Add stock, tomatoes and honey
and simmer for about 10-15 minutes to marry flavors.
Let soup cool slightly and put ½ of it into blender
with sour cream. Blend until smooth. Transfer to
another pot. Blend the other half of the soup and add.
Warm blended soup. Add basil and pepper before serving.
Yield: 4 servings

FREEZING ONIONS 3 WAYS FOR LATER COOKING
There are three ways you can freeze your onions. Freezing does
change the onions texture so use only for cooking.
1. Chop and place onions on a cookie sheet in the freezer.
When frozen, remove and place in freezer containers or
bags, and seal. This allows you to remove the amount you
want, when you want.
2. You can also freeze whole onions. Peel, wash, core and
place onions in a plastic bag and freeze.
3 You may also slice your onions and saute them in a little
butter, cool and then freeze in freezer bags.
