Such a simple chicken coating that's different than
a panko crumb thing anbd baked to boot! This is good to
give a go with fish too don't be shy.
Serve as a main dish with a green salad and a side of
pasta or on thick toast with lettuce and tomato. Either
way you'll be enjoying this southern treat.

RECIPE: SOUTHERN PECAN CHICKEN

INGREDIENTS:
6 boneless, skinless chicken breasts, pounded thin
4 cups ice water and ice
4 t salt
3/4 cup ground pecans
2 whole eggs
2 T milk
2 T honey
1/2 t salt
1/2 t black pepper, course ground fresh
DIRECTIONS:
Marinate the chicken breasts in iced salt water for 1/2 hour.
Beat milk with honey, then add beaten edds, salt and fresh
ground pepper. Put egg wash in one shallow bowl, and pecan
meal in another. Dip each chicken breast in the egg wash,
then into the pecan meal and pat the meal into the breast
to form a crust. Place the breasts in a shallow baking pan
that has been sprayed with cooking spray, and bake for 35
minutes at 375, or until the breasts are done through.

KITCHEN TIPS: LOOK OUT WHEN THE POWER GOES OUT!
Keep the cold inside the refrigerator by opening the fridge and
freezer doors only when absolutely necessary. A full, freestanding
freezer will stay at freezing temperatures about two days; a
half-full freezer about one day. If your freezer is not full,
group packages together so they form an "igloo" protecting each
other. If you think power will be out several days, try to find
some dry ice.
** Extreme: If an area or region has sustained damage as a
result of tornado or any other serious storm, it is important
to drink only approved or chlorinated water. Consider all water
from wells, cisterns and other delivery systems in the disaster
area unsafe until tested.
