Perfect for any of those mid-summer picnics
or a mail dish, this is about an all-time fave
and I'm digging it out of the past since I
happen to be making it again and each time
I get a million requests for it..PARTY TACO
SALAD.

Always good to have those old stand-bys and
I highly doubt it'll ever get old.

RECIPE: PARTY TACO SALAD

INGREDIENTS:
2 lbs ground beef
2 packages taco seasoning mix
16 ounces cheddar cheese, shredded
1 red onion, chopped
1 yellow onion, chopped
2 heads iceberg lettuce, chopped
4 tomatoes, chopped
2 avocados, chopped
1 can black olives, chopped
1 large bag of Doritos nacho chips, crumbled
1 8-ounce bottle Catalina salad dressing

DIRECTIONS:
Brown ground beef with chopped yellow onion. Add 1 package
of taco seasoning and water according to package directions.
Set aside to cool completely. In a large bowl mix together
chopped lettuce, tomato, cheese, avocado, red onion,
olives, and 2nd package of taco seasoning. Add cooled beef
mixture. Just before serving toss with the dressing and the
last step is to mix in 3/4 of the package of crushed Doritos,
leaving the rest on the side for people who want extra.
(they get soggy if you do them too early.)

MAKE YOUR OWN CROUTONS!

Making your own salad croutons is simple-all it takes are a
few slices of day-old (older) bread. Homemade croutons are
much fresher and more flavorful than the package kind. They
accent many types of salads. Once you have tasted the
following, you will never again spend money on store-bought
croutons. Any croutons that aren't used within a day or two
should be stored in a cool place in an opaque, airtight
container. They can also be frozen.

Garlic Croutons
Cut crusts from 5 slices firm white bread or 6 slices French
bread. Dice bread into 1/2-inch cubes. In a large frying
pan over medium heat, heat 2 tablespoons each butter or
margarine and olive oil or vegetable oil. Mix in 1 clove
garlic (minced or pressed). Add bread cubes, stirring until
well coated with butter mixture. Transfer bread cubes to a
rimmed baking sheet and spread in single layer. Bake in a
300 degree oven until lightly browned and crisp. cool.
Makes about 2 cups.
