The kids had a great Halloween day I love when it falls
on a weekend and although a little chilly it was sunny
and they ran around the neighborhood as graduates in
caps and gowns. Some halloween cartoons in the evening
and all that fresh air knocked them out cold...me too!
Well now that we're back from our sugar shock time to
get ready for the holidays and Thanksgiving recipes.
We haven't done potatoes in a while (one of my favorite
things on the table). This HASH BROWN TATER CASSEROLE
recipe is a hands-down favorite at gatherings and goes
with about any type of main dish you can think of. Another
perfect one for a Fall table and even Thanksgiving since
you can assemble ahead of time and I rarely see any
leftovers. Oh and this isn't one you would do any gravy
for.

RECIPE: HASH BROWN TATER CASSEROLE

INGREDIENTS:
2 pounds frozen hash brown potatoes
1/2 cup melted butter
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup onion, chopped
1/2 cup cream of chicken soup
1 pint sour cream with chives
2 cups grated cheddar cheese
1/2 cup celery, chopped
Toppings
2 cups crushed potato chips
1/2 cup melted butter
DIRECTIONS:
Defrost potatoes. Combine melted butter, salt, pepper,
soup and sour cream. Mix hash browns with onion, celery
and cheese. Mix in soup mixture. Pour into a greased 9x12
inch casserole dish. For Topping: Mix butter and chips.
Sprinkle on top of casserole. Bake in a 350 degree oven
for 45 minutes or until topping is golden brown.
Yield: 16 Servings

PLANNING AHEAD TURKEY TIPS:
When buying a turkey, allow 1 pound per adult serving
if the bird weighs 12 pounds or less. For larger turkeys,
count on 3/4 pound for each serving. If you want leftovers,
buy a bird that's 2 to 4 pounds larger than the size you'll
need for serving.
Although not all turkeys are labeled indicating whether
the bird is a hen or tom, select a hen turkey if you want
more white meat and a tom if you want more dark meat. Also
check for the "sell by" date on the label of a fresh turkey.
This date is the last day the turkey should be sold by the
retailer. The unopened turkey should maintain its quality
and be safe to use for one or two days after the "sell by"
date.
If you buy a frozen turkey, look for packaging that is
clean, undamaged, and frost-free. Allow plenty of time to
thaw a frozen turkey. For a whole frozen turkey, leave the
bird in its wrapping and place it on a tray in the refrigerator.
Plan on at least 24 hours for every 5 pounds and don't count
the day you'll roast the bird. (Once thawed, turkeys will keep
one or two days in the refrigerator.)
