swap from the heavy comfort foods to the Spring delicacies.
If you can find good zucchinis this time of year, these
ZUCCHINI BOATS combine a fresh spring veggie with a
savory beef and rice stuffing. Be an early bird and check it

RECIPE: ZUCCHINI BOATS
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*=

INGREDIENTS:
4 medium zucchini
1 cup long grain rice, cooked
1 medium yellow onion, chopped
1 garlic clove, chopped
1 egg, beaten
2 tablespoons olive oil
1/2 pound lean ground beef
1/2 cup bread crumbs
2 cups canned spaghetti sauce
3 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
2 tablespoons parmesan cheese, grated
DIRECTIONS:
Split zucchini lengthwise, scoop out seeds. Saute ground
beef, onion, garlic, dill, and parsley in olive oil. Remove
from heat. Add cooked rice, beaten egg, 1/4 c bread crumbs
and mix well. Fill zucchini with mixture and place in a
baking dish. Cover with spaghetti sauce, sprinkle cheese and
remaining bread crumbs on top. Cover and bake at 350 for
approx 45 minutes, until zucchini is tender but firm.
Yield: 8 Servings

For everyone who is still stocking up on the Winter
soups and stwes...here are a few CROCKPOT COOKING TIPS:
* liquids don't boil away as in conventional cooking.
Usually you'll have more liquid at the end of cooking
instead of less. So always cook with cover on...except
to "brown off" the liquids after cooking
* Recipes that will not adapt well are those that require
broiling or deep frying. If you feel unsure about a step,
go ahead and follow the recipe's directions as written.
* Most uncooked meat and vegetable combinations will require
at least 8 hours on low. Many recipes say "bring to boil,
then turn down to simmer." In a crock pot this is not
necessary. Simply set the crock pot to low and forget it.
Crock pot cooks so gently...so an extra hour on low need not
worry you. Any recipe can be cooked on high the first two
hours to reduce cooking time, and then turned to low.
