Let the countdown to fun continue...let's hear it
again for the snacks! Remember you don't want to do
a lot of cookin' on "game day" and it doesn't even
matter who wins...just how good the snacks are so
today is a great BLACK BEAN TORTILLA SPIRALS recipe
that's easy as 1-2-3 to whip up. This is perfect if
you're going to a party and need to bring something
along.

For me, actually another of the best snacks is a hot
crockpot full of cocktail meatballs that have been
swimming in Sweet Baby Ray's BBW sauce for at least
an hour. You just can't stop eating those!

Super Bowl Sunday is the largest snacking occasion of
the year.

Of the 62 percent of Americans who watch the Super Bowl,
75 percent do it while snacking.

During last year's Super Bowl, Americans ate 10.8 million
pounds of potato chips; second was tortilla chips, 8.1
million pounds; third, pretzels, 4.2 million; fourth,
popcorn, 3.8 million; and fifth, snack nuts, 2.5 million.

RECIPE: BLACK BEAN TORTILLA SPIRALS

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~

INGREDIENTS:
8 ounces cream cheese, softened
1 cup shredded Colby Jack cheese
1 4-ounce can diced chiles
1/2 cup sour cream
1/2 cup chopped green onions
2 cups canned black beans, rinsed and drained
6 10-inch flour tortillas

DIRECTIONS:
Beat cheeses, sour cream and onion in small mixing
bowl at medium speed with electric mixer until well
blended. Place beans in food processor and blend
until smooth. Spread thin layer of beans onto each
tortilla. Spread cheese mixture over beans. Roll
tortillas up tightly and refrigerate 30 minutes.
Cut into 1/2 inch slices and serve with salsa.

Yield: 24 Servings

I'M KEEPIN' THOSE PARTY TIPS KICKIN':

Stock up on all your party snacks such as chips,
dip, crackers and drinks several days ahead of time.
Around game-day the stores are going to be picked
over and never mind the crowds!

Arrange all your food platters (cold cuts, veggies
and cheeses), and then cover them with aluminum foil
and place them in the fridge until game time.

Make sure you have a nice selection of both alcoholic
and nonalcoholic beverages.

Decorate with cutout footballs, helmets and pennants
from the local party supply store. Look for serving
items such as a helmet to hold dip and a football-shaped
bowl for chips, as well as napkins and plates with football
art on them.

Have your own mini-pool and award a silly prize, such
as a Nerf football, to the winner during each quarter.

Set up televisions in more than one room if you can...
like the kitchen, so that your guests can move around,
get more drinks and still keep an eye on the action.

Set up a separate kids' room with video games, board
games, coloring books and snacks.

Now everyone can have fun!
