Readers:

Well, in the tradition of New Year's Resolutions and want-
ing to lose weight and getting into shape, I've decided to
take charge and take better care of myself.

I've often talked about doing this every other issue of
the Diabetic Digest, but this time I mean it. I know you
read that before, but I'm actually making a valiant effort
here.

My wife, Stacy, has made me a food/insulin journal to help
me get a better understanding of the relationship between
my insulin and what I eat. That and exercise are my main
problems, but now I am indeed exercising. For my birthday
last year, Stacy signed me up for skating lessons. I've
always wanted to learn to ice skate, I'm a big hockey
fan, and I really needed a regularly scheduled hobby or
activity that involved exercise. My wife is pretty and
crafty. She's pretty crafty.

I just started the lessons and the food/insulin journal
this week so we will have to see how things go from here.
I am very excited about these changes and I'm confident
that I can improve my health and hopefully lose a few
pounds.

Wish me luck and I'll let you know how things are going
next week.

Men With Type 1 Diabetes Eventually May Have a Way to Grow
Their Own Pancreas Transplants

Scientists from Georgetown University Medical Center in
Washington, D.C., have found that stem cells that normally
grow into sperm can be altered to change into insulin-
producing beta-cells instead.

The researchers reported these findings at the recent
meeting of the American Society of Cell Biology in
Philadelphia. Further development of this technology
could eventually remove many problems now associated
with stem-cell technology and pancreas transplants.
Transplants of whole pancreases or of isolated beta
cells are often rejected, requiring the use of strong
immune-suppressive drugs. Donor tissues are also severely
limited in supply. With sperm cells, rejection would not
occur because the cells would come from the patient him-
self, and they would be unlikely to become tumors because
they are already stem cells. For the new technique,
researchers used tissue from human testes from recently
deceased donors and placed them in a special growth medium
in the laboratory, where the cells began producing insulin.

"These are true pluripotent stem cells," said Georgetown
biochemist G. Ian Gallicano. The researchers still face
the challenge of making the cells survive for very long
periods of time in the recipient.

-------------------- Diabetic Recipe --------------------

New Mexican Chicken-Cilantro Sausage Strata
(makes 8 servings)

olive oil cooking spray

1 pound (480 g) purchased low-fat New Mexican chicken-
cilantro sausages or other low-fat chicken or turkey
sausages

2 cups (480 ml) 1% low-fat milk

1 1/2 cups (360 ml) egg substitute

refrigerated butter-flavored cooking spray

3/4 cups (90 g) shredded low-fat sharp cheddar cheese

8 slices good-quality white bread, crusts removed and cut
into cubes

1 1/2 cups (360 ml) Roasted Tomatillo Salsa (recipe follows)

1. Remove and discard sausage casings. Crumble the sausage
and sauté in a nonstick skillet over medium heat until
evenly browned, stirring and breaking up any large clumps
with a wooden spoon. Using a slotted spoon, transfer the
browned sausage to paper towels to thoroughly drain.

2. In a 1-quart (1l) measuring cup, whisk together the
milk and egg substitute.

3. Lightly coat a 2-quart (2l) casserole dish with cooking
spray. Place 1/4 cup (30 g) of the shredded cheese in a
self-sealing plastic bag. Refrigerate. Layer 1/3 of the
bread cubes on the bottom of the prepared baking dish.
Top with half of the browned sausage and 1/4 cup (30 g) of
the shredded cheese. Pour 1 cup (240 ml) of the milk-egg
mixture over the top. Repeat the layers, finishing with
the final bread layer and the remaining 1 1/2 cups (360 ml)
of the milk-egg mixture. Cover with the tomatillo salsa.
Cover with plastic wrap and refrigerate overnight.

4. Pre heat oven to 350°F (180°C, Gas Mark 4). Uncover the
casserole. Sprinkle the top with the reserved shredded
cheese. Bake until the strata is bubbling and golden brown
and a knife inserted in the center comes out clean, about
50 to 60 minutes. Remove from the oven and let rest for
10 minutes before serving.

Per serving: 199 calories (19% calories from fat),
20 g protein, 4 g total fat (1.6 g saturated
fat), 21 g carbohydrates, 1 g dietary fiber,
f24 mg cholesterol, 375 mg potassium, 689 mg
sodium

Diabetic exchanges: 2 lean protein, 1 1/2 carbohydrate
(1 bread/starch, 1/2 skim milk)
