Readers:
Spring is upon us. Now that the weather is improving, I'm
looking forward to expanding my exercise activities to the
outdoor arena.
I'm looking forward to long, brisk walks, biking, swimming,
tennis, and the list goes on. Well, maybe I'm setting the
bar a little high. I think I'll start off with some walking
and see how things go.
I know that some of you out there are just as excited as I
am about taking advantage of the beautiful weather that is
headed our way. Don't try and deny it. Enjoy, enjoy, enjoy.

BOSTON - U.S. scientists say they've developed a new strat-
egy for normalizing blood sugar in type 2 diabetes that
may resolve lost response to insulin due to obesity. The
researchers at Children's Hospital Boston say they have
identified a cellular pathway that fails when people
become obese. By artificially activating the pathway, they
said, they were able to normalize blood glucose levels in
severely obese and diabetic mice. Epidemiologists have
long known that obesity contributes to type 2 diabetes. In
previous work, Dr. Umut Ozcan at the hospital showed the
brain, liver and fat cells of obese mice have increased
stress in the endoplasmic reticulum, a structure in the
cell where proteins are assembled, folded into their proper
shapes, and dispatched to do jobs for the cell. In the
presence of obesity, the endoplasmic reticulum is over-
whelmed and its operations break down. This so-called "ER
stress" activates a cascade of events that suppress the
body's response to insulin, and is a key link between
obesity and type 2 diabetes, the scientists said. Until
now, however, researchers haven't known precisely why
obesity causes such stress to develop. But in the new
study, Ozcan and colleagues said they show a transcription
factor that normally helps relieve ER stress is unable to
function in obese mice. The research appears in the early
online edition of the journal Nature Medicine.

Roasted Tomatillo Salsa
(makes 2 cups)
8 fresh tomatillos, husks removed
1 jalapeño chile pepper, stem and seeds removed
olive oil cooking spray
grated zest and juice of 1 lemon
1. Preheat oven to 350°F (180°C, Gas Mark 4).
2. Place the tomatillos and jalapeño on a small baking
sheet. Lightly spritz with cooking spray. Roast for 20
to 25 minutes, until tomatillos are golden and soft.
3. Transfer tomatillos and jalapeño to a food processor.
Process until smooth. Add the lemon zest and juice. Pulse
again to mix.
4. Use 1 1/2 cups of the salsa as directed above.
Refrigerate the remaining salsa to use over grilled
fish or chicken.
Per 1/4-cup (60 ml) serving: 13 calories (0% calories from
