Diabetic Digest - Wednesday, April 20, 2011

Readers:

I went see my foot doctor on Monday. I had been feeling
good since my last visit, but for the last few weeks I
noticed a pain in my left foot, the big toe on my left
foot to be exact. It was another in-grown nail that need-
ed to be tended to by a professional, not by me. It wasn't
as bad as I initially thought, but you can never be too
careful when it comes to your feet.

I know that I've written extensively about the importance
of foot care for those living with diabetes. Again I just
want to reiterate to you not to take your health, safety
and well-being for granted.

I may have run this very important video clip before, but
I'm going to show it again because I think it's even more
appropriate at this time.

Most people know that diabetes affects the blood sugar.
But few are aware of the disease's effects on the feet!
If you're diabetic, here's why you'll want to keep tabs
on your toes.

Please watch, take care of yourself, and enjoy the rest
of today's Diabetic Digest.

Steve

3 diabetes drugs beat rivals in preventing heart disease
U.S. News & World Report/HealthDay News

Diabetes drugs metformin, gliclazide and repaglinide
proved more effective than other treatments in lowering
the risks of cardiovascular disease and death, according
to a study of more than 100,000 Danish people older than
20. Glimepiride, glibenclamide, glipizide and tolbutamide
were linked to a higher risk of all-cause mortality as
well as to a higher risk of heart attack, stroke and
cardiovascular death, the study found.

Poll: Many patients with diabetes are uneducated about
hypoglycemia
Medscape

An online survey of 2?530 adults with type 2 diabetes
found that many of them did not know hypoglycemia risks?
with 27% not knowing that skipping meals is one of its
major causes and 35% unaware that certain medications
might aggravate the condition.

Although 52% of respondents said they were worried about
suffering hypoglycemia? at least 17% didn't know that
dizziness and shakiness were among its major symptoms?
researchers found.

------------------ Diabetic Recipe ------------------

Roasted Beet and Citrus Easter Salad
(makes 12 servings)

1 1/2 pounds (720 g) small red beets, trimmed and scrubbed

olive oil cooking spray

salt (optional) and freshly ground pepper

3 small navel oranges

1/4 cup (60 ml) fresh orange juice

1 tablespoon (15 ml) balsamic vinegar

2 tablespoons (30 ml) olive oil

2 teaspoons (10 ml) Dijon mustard

2 5-ounce (150 g) packages mixed baby greens

1 small sweet onion, Vidalia, Texas Sweet 10 or Maui or
Walla Walla, cut in half cross wise and very thinly sliced

10 kumquats, sliced crosswise into thin rounds, seeds
removed

1. Preheat oven to 425°F. Place the beets in the center of
a large piece of foil. Lightly spray with cooking spray and
season with salt (if using) and pepper. Wrap foil around
beets and seal to make a packet. Place on a large baking
sheet and roast for 1 hour, until beets are tender when
pierced with a knife. Let beets stand until cool enough
to handle, then slip off the skins and thinly slice. Set
aside.

2. Working over a bowl to catch any juice, cut the peel
and pith from the oranges. Slice the oranges into thin
rounds. Set aside.

3. To the juice in the bowl, add the orange juice, balsamic
vinegar, and olive oil, and mustard. Whisk until thoroughly
combined.

4. To serve, arrange the greens on a large platter. Arrange
the beets and oranges over the lettuces. Scatter onions on
top and arrange the kumquat slices over all. Whisk orange
juice mixture again and drizzle over all. Serve at once.
