We'll cool off a bit today from the grilling ideas to
get a little fancier here with these COOL SALMON
CANAPES. A healthier alternative to chips and dip, you
can even substitute low-fat cream cheese and not sacrifice
a bit on taste but cut out some of the fat. This mouth-
watering recipe is sooooooooo easy and will look like to
ordered form the caterer.
The great thing about canned salmon is you can get it
at any time of year and it contains the same basic
nutrients as wild salmon. It is also useful in all sorts
of applications from salads to casseroles. But whatever
your preference, there's no denying that this pink-fleshed
fish has a bold and distinctive flavor.

RECIPE: COOL SALMON CANAPES*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~
INGREDIENTS:
1 package (8 ounces) cream cheese, softened
1 can (6 ounces) chunk-style salmon; drained
2 tablespoons mayonnaise
1 lemon
1/4 cup shredded carrot
1 tablespoon chopped onion
1 tablespoon fresh snipped dill weed
2 medium cucumbers, sliced
DIRECTIONS:
Combine cream cheese, salmon, and mayonnaise and mix
well. Juice lemon to measure 2 teaspoons lemon juice.
Zest lemon to measure 1 teaspoon lemon zest. Add
lemon juice, lemon zest, shredded carrot, onion, and
dill to mixture; mix well. Slice cucumbers into 1/4-
inch thick slices. Top each cucumber with 1 tablespoon
of salmon mixture. Top if you like with a small sprig
of fresh dill for garnish.
Tip: This is best presented using a pastry bag and
a star tip to pipe salmon mixture onto cucumber
slices.

SALMON IS A SUPER FOOD Overall, canned salmon offers the same health
benefits of other forms of salmon. These health
benefits center on omega-3 fatty acids, which are
found in other fatty fish such as tuna, trout or
sardines. As an alternative to tuna, salmon offers
more omega-3 fatty acids. One 4-oz serving of salmon
provides around 2.2 grams of omega-3, versus 1.06
grams in albacore canned tuna.
Canned salmon comes in three main varieties:
* Pink- The mildest form of canned salmon
* Sockeye- Stronger flavor and brighter color
* King Salmon/Chinook- A more expensive variety
