Good morning crew,

Wow! I received a much bigger response to my shrimp boil
than I got from any of my jokes in the last year. Maybe
I am a better food critic than I am a humorist. At least
my subscribers are still reading my emails!

Next time, add Zatarain's crab boil and a
bunch of cayenne pepper. Zatarain's is a
bag full of spices that really livens up
the flavor, and the cayenne adds a zip to
it. This recipe is good for shrimp, crabs,
and crawfish. Boy, do I miss Louisiana!!
-Carl

I wish I had made the whole thing spicier. While it was
delicious it was a little bland. I thought adding Tabasco
habanero would do it, but apparently I need to be a little
more aggressive. Maybe next time I'll toss the whole thing
with a dry rub after I drain it.

Hi Joe, I really miss your sailing adventures
but, oh well. As for the seafood boil you
don't need to restrict it to just shrimp.
Crab, scallops and oysters do well too.
Another thing to add is the zest of a lemon,
orange or lime. You can add different spices
such as garlic salt, chili powder, red pepper,
etc. I live in Florida where there is abundant
seafood all the time. Lucky me. -Linda

I did add the juice of a lemon to my boil, I just forgot to
mention it in Tuesday's column. A little garlic would be a
great addition, too!

Try adding some different seafood. The husband
did one at the beach last year with shrimp,
crab meat and scallops. We used some old bay
seasoning and it was fabulous. Happy eating
and quit making me hungry!

I looked for Old Bay in two different stores, but could not
find it! And next time I will definitely try some different
kinds of seafood, like scallops and maybe crawfish!

Next time try a Zatarain's shrimp and crab
boil seasoning bag. We boil our water with
the seasoning bag, add potatoes and corn,
then smoked sausage and green onions. About
10 minutes before the corn and potatoes are
ready, we add crab legs. 5 minutes later we
add shrimp. 2 minutes later we add small sea
scallops. If you like it really spice, add
a bottle of Tabasco into the water with the
seasoning bag. I promise you will not be
disappointed! -Melissa

Several people mentioned Zatarain's and Old Bay. I will
look for them both. Someone also mentioned using andouille
sausage instead of smoked. Sounds yummy!

Thanks for all the feedback.

Laugh it up,

Joe

A woman had been thinking about coloring her hair. One day
while going through a magazine, she came across an ad for a
hair coloring product featuring a beautiful young model with
hair a shade that she liked.

Wanting a second opinion, she asked her husband, "How do you
think this color would look on a face with a few wrinkles?"

He looked at the picture, crumbled it up, straightened it
out and studied it again. "Just great, hon."

After I took a job at a small publishing house, the first
books I was assigned to edit were all on the topic of
dieting.

"Isn't the market flooded with these types of books?" I
asked another editor. "How do we expect to turn a profit?"

"Don't worry," he assured me. "These books appeal to a wide
audience."
