Did all of our favorite men enjoy their Father's Day?
Hope so we sure pampered Hubby with his favorite things.
He' Mr. handyman arouhd here too and found it quite
challenging to keep him from actually working on projects
on Father's Day.
Remember that "cookie-cookie-cookie starts with C" song?
I may be dating myself but I have kids and that was pretty
much a lullabye in my house! From Dads to grads I have a
great cookie idea..as if you need an excuse to make cookies?
These are low-fat treasures that keep the cholesterol at
bay but nobody will notice because they are so tasty. I
keep my Pampered Chef powdered sugar shaker handy for
these and lemon bars ;o)

RECIPE: WALNUT COOKIES

INGREDIENTS:
2 cups all purpose flour - sifted
2 cups walnuts - finely chopped
4 teaspoons baking powder; sifted with the flour
1 cup egg substitute
1 cup sugar
2/3 cup brown sugar
1 tablespoon vanilla extract
cinnamon and nutmeg to taste
3 tablespoons skim milk
powdered sugar
DIRECTIONS:
Pre-heat oven to 375 degrees. Mix egg substitute, vanilla
and sugars in a large bowl. In another bowl sift the flour,
baking powder, cinnamon and nutmeg. Add to the wet
ingredients slowly. Stirring from the middle mix well,
add a little milk if it gets too thick. Fold in the nuts.
Drop tea spoonfuls onto no-stick cookie sheet and flatten
out a little for larger cookies, leave rounded for nut
shaped cookies. Put in the oven oven for 10 to 12 minutes
until lightly browned. Watch them carefully so the bottoms
do not burn. Sprinkle with powdered sugar if desired and
allow to cool.
Yield: 4-5 dozen cookies
