Lots of picnics and parties this summer and still plenty
to go. Today's BERRY SALAD WITH YOGURT DRESSING is great
for any party or picnic but if you do take it with you on
an outing it's a good idea to keep the dressing and berries
separate until you are ready to serve. This dressing is
also great on other desserts and with ice cream. there are
some great tips down below today too for using fresh
strawberries.

RECIPE: BERRY SALAD WITH YOGURT DRESSING
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*
INGREDIENTS:
1 cup no-fat/low-fat vanilla yogurt
1/4 cup honey - any kind will do
1 to 2 tablespoons skim milk (as needed to thin out dressing)
cinnamon and nutmeg to taste
4 cups of Berries -Strawberries, blueberries, raspberries, etc.
fresh peppermint leaves, whole or finely cut
DIRECTIONS:
Wash, stem and sort berries. In a small bowl combine
yogurt and honey and whisk together. Add cinnamon and
nutmeg and whisk until well incorporated. Add milk until
you reach your desired consistency. Place berries in
serving bowls and drizzle the yogurt dressing over the
top. Garnish with mint and serve immediately.

WORKING WITH STRAWBERRIES:
* When buying, look for plump, bright red, fully ripe
berries. The top leaves should be attached, green and
fresh looking.
* To hull you can use a sturdy plastic straw. Push it
up through the bottom of the strawberry and through the
top. It does a great job quickly & neatly...plus the
berries ook excellent if you want to leave them whole.
* The size of the strawberry is not important. All
strawberries, large and small, have the potential to be
equally sweet and juicy.
* Sort and remove any bruised or damaged berries as
soon as possible, being in contact with spoiled fruit
can cause good fruit to go bad quicker.
* Place the berries in cool, well ventilated containers.
The moisture content of Fresh Strawberries is high, so
store uncovered or loosely covered.
* Hull strawberries and rinse gently right before serving.
