For those who prefer not to go out to a restaurant on
Valentine's Day I'm serving up a little romance with
this this couple-sized portion of BEEF TENDERLOIN TOPPED
WITH HERBED CHEESE. This is a terrific choice because of
it's easy preparation you will not be taking away time
with your special Valentine. Couple this with whatever
sides you like, nothing too heavy since you've already
got the beef.

Add a little wine, fresh flowers, soft music and some
candlelight and you've got Cupid's perfect setup for a
romantic dinner for 2. Hubby and I always enjoy cooking
together and it doesn't have to be crazy complicated to
be special, keep it simple and you will be more able to
enjoy together ;o)

RECIPE: BEEF TENDERLOIN FOR 2 WITH HERBED CHEESE

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*

INGREDIENTS:
4 (1-inch thick) beef tenderloin steaks
2 tablespoons softened cream cheese
4 teaspoons blue cheese, crumbled
4 teaspoons plain yogurt
2 teaspoons minced onions
dash of pepper
1 large garlic clove, halved
1/2 teaspoon salt, divided
2 teaspoons freshly chopped parsley

DIRECTIONS:
Combine cream cheese, blue cheese, yogurt, onion and pepper;
reserve. Rub each side of beef steaks with garlic. Place
steaks on rack in broiler pan so surface of meat is 2 to 3
inches from heat. Broil 5 to 6 minutes. Season with salt.
Turn and broil 3 to 4 minutes. Season with remaining salt.
Top each steak with an equal amount of reserved cheese
mixture. Broil an additional 1 to 2 minutes. Garnish with
parsley.

Yield: 2 Servings

WHAT TO LOOK FOR WHEN SELECTING BEEF:

Follow these tips to help select beef that is fresh,
high quality, good tasting and safe.

* Select beef with a bright cherry-red color, without
any grayish or brown blotches. A darker, purplish-red
color is typical of vacuum-packaged beef because of
lack of oxygen but once exposed to the air it will
turn bright red.

* Look for beef that is firm to the touch and not soft.

* Make sure the package is cold with no holes / tears.

* Choose packages without excessive liquid. Excessive
liquid may be an indication of improper storage or beef
that is past it's optimum shelf life.

* Check the sell by date on the package and stick to it.

* Select your beef just prior to checking out to help
keep it cold.
